Hart Bageri
Richard Hart, former head baker at San Francisco’s beloved Tartine Bakery, has partnered with Rene Redzepi to open Hart Bageri in Copenhagen. The breads and pastries vary daily with cafe items to appear in the near future. I especially liked the spandauer, sausage roll and the salat bowl.




The signature Danish tebirkes is a layered buttered, flaky, poppy seed pastry topped filled with a slightly sweet almond paste. It’s a must-try when in Copenhagen. The spandauer is also popular in Denmark. Also a flaky, buttered puff pastry, this version has a wonderful custard filling baked right into the middle. And of course, no visit to Scandinavia is complete without having tried each region’s own kardemomme or cardamom bun. The complex flavors of cardomom are spicy, sweet and flowery with a peppery finish.
