A night learning about sake and soju from NYC local friends at Shigure then industry parties with a friend from the left coast. I cannot wait to come back to NYC and try more of the food at Shigure. Their Shio-Koji Fried Chicken dish is outstanding.

My friends taught us so much about sake and soju.Sake is made from only rice, more like a wine, is distilled then fermented.Soju (hidden behind the arm serving chicken) is made from rice, barley and sweet potatoes, converted from starch to sugar then to alcohol, more like a vodka or whisky, then aged for 10 years.Shio-Koji Fried Chicken with scallion oil. I have thought about this chicken a lot since I’ve been back home.Duck Cha-Shu. Very good!Washugyu Tataki, mushroom, Kazami-wasabi sauce.
